Honestly, the Stone-Fruit Snack Cake you shared a few weeks back! So delicious. I was making things for a friend's brunch last week and suddenly decided I needed to bake something as a treat for myself, and it fit the bill perfectly! I used nectarines, but want to try it again soon with peaches.
And also, some simple Cajun sausage and rice that set my mouth on fire but made me think of home. (Recently moved away from Louisiana.)
I do have to agree - bloos are better on their own. I LOVE them in baked treats...but nothing quite competes with the way they 'pop' when you bite in. I love them in yogurt, or adding them to grain cereals, for that reason.
I can put away some plain blueberries though - if not hindered, I'll eat them all.
As for the best bite I've had recently: a veggie-based (absolutely no meat) lasagna. I am a meat eater. I love meat so so much. But that veggie lasagna from a local catering company? It transcended all my expectations and took me right out.
Ask that catering company to spill their secrets! Kidding...but I did save a recipe last night for a beautiful-looking zucchini & feta lasagna, so this tracks!
Per their menu, it was a Roasted Vegetable Lasagna with Goat Cheese...so while I am not planning on stealing their recipe (at least outright...), I DO plan on hunting down as many similar recipes and making it at home until I figure out their magic...because that lasagna WAS magic.
I started working at a tiny local foods store last week, and getting to eat the imperfect produce has been glorious. Sweet South Carolina peaches, perfectly ripe cantaloupe, and tart local tomatoes (with salt and pepper) were the high points of my week. Hope your cold gets better very soon! I respect your gracious attitude towards doing quiet home things in the meantime.
That sounds glorious - I haunt our local produce stand and have seemed to have missed many of the prime weeks of produce this summer! Need to get my hands on some perfect peaches before they're gone for another year...
